QUINOA POWER SALAD

Delicious, nutritious, containing all 9 essential amino acids, vegan, gluten free and high fibre. OH MY!
1 ½ cup dry quinoa
3 cups water
1 red bell pepper, diced
½ cup green onion, diced
1 bunch of parsley, rinsed well and finely chopped
2 Tbsp olive oil
½ tsp cumin
Juice of 2 lemons
Zest of 2 lemons
Salt to taste
To cook quinoa: bring water to a boil on high. Turn down to low heat and add quinoa, simmer 15 – 20 mins or until water is gone. Remove from heat and fluff with a fork. Place in a medium sized bowl and allow to cool.
For best visual experience layer in a clear glass bowl in this order: cooled quinoa, diced pepper, diced onion, parsley then lemon zest. Drizzle with lemon juice and oil.
